Ingredients:
4 boneless, skinless chicken breasts
2 lemons, juiced and zested
4 garlic cloves, minced
1/4 cup olive oil
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper, to taste
1 head of broccoli, chopped
2 carrots, sliced
1 bell pepper, sliced
1 red onion, sliced
Instructions:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a small bowl, whisk together lemon juice, lemon zest, minced garlic, olive oil, oregano, thyme, salt, and pepper.
Place chicken breasts in a large ziplock bag and pour the marinade over them. Seal the bag and massage the chicken to coat evenly. Place in the fridge to marinate for at least 30 minutes or overnight.
